In February 2018 researchers from the Russian Federation published the nutritional profile of tomato juice. Tomato juice is a significant source of antioxidants – carotenoids and vitamin E, as well as several minerals and trace elements. The amount of lycopene in 200-250ml of tomato juice either meets or exceeds the recommended daily intake whilst the same volume of juice provides about 20% of the recommended daily intake of vitamin A, 12-15% for potassium and copper, and about 5% for magnesium, iron, manganese and phosphorus. Tomato juice is a source of dietary fibre, including pectin, and a glass of tomato juice contains about 12% of the recommended daily intake of pectin and about 8% of dietary fibre. The calorie content of tomato juice is low and is an average of 19 kcal/100 ml.
